Creamy Avocado Pasta with Sautéed Zucchini (Vegan, GF Option) by @hello.kalin

𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
• 1 ripe avocado
• 2 minced garlic cloves
• 1/2 cup fresh basil
• juice from 1 lemon
• A handful of raw spinach
• 2 tbsp EVOO (extra virgin olive oil), or sub veggie broth
• salt & pepper to taste
• 1 zucchini, thinly sliced
• 1 box (8 oz) chickpea pasta or pasta of choice (gluten-free if needed)
𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦
1. Cook pasta, drain and set aside.
2. Meanwhile, heat a non-stick skillet over medium-high heat. Add chopped zucchini with some salt & pepper and cook until browned (a dash of oil is optional).
3. In a food processor, combine avocado, garlic, basil, lemon juice, spinach, and olive oil. Process until smooth.
4. Toss on pasta and add zucchini on top. Enjoy!
